Sinigang sa Bayabas

In the Philippines a sour pork or fish or chicken broth named SINIGANG is a good hearty meal in combination with rice.Sour fruits are use. It can be guava, tamarind, kamias, or santol .I am not sure if other fruits are use but at least in my hometown in Paombong ,Bulacan, these are the fruits we choose for this main course. What we do is we boil first either milk fish , pork ,chicken or beef. Then we mix the mashed sour fruit .For chicken, we can only have tamarind. For milk fish we can have any of the sour fruits but the best is the santol. For beef and pork, we can have tamarind or guava. When the meat is done, we can now add kangkong or watercress, okra, gabi or yam, and string beans. In this picture is my favorite sinigang-sinigang sa bayabas
